Jen, I've been vegan about 95% of the time for the past 2+ years and I really love it (i added fish on occasion after a strict year or so). With the Maker's this year, I decided to go crazy and try some eggs and that raw milk goat cheese just for fun, and both times I woke myself up coughing in the middle of the night and very congested the next day. It was a good lesson for me. I guess my body is so used to not having it that it is rejecting it. The cheese and eggs did taste quite good, though, but not worth losing sleep over :-). I left meat cold turkey and haven't looked back on that front. Cheese is a different story. I found some yummy nut cheeses that are nut (cashew, sunflower, pine) based. Being vegan (95% of the time) takes some planning, but it's worth it. Beware of the dogmatic ones out there as you continue to explore -- I have been guilty of it myself! Have you explored the "Raw vegan" side of things yet? Oh, that's a load of fun! I have some favorite vegan spots in NY if you're interested and haven't yet tried them!
